Zeytinyağlı Biber Dolması (Stuffed Green Peppers)

MATERIALS
- 1 cup rice
- 5 green peppers (small-mid size)
- 3 onions
- 1 tomato
- 2 tablespoons of pine nuts
- 3 tablespoons of currants
- ½ cups olive oil
- 1 teaspoon granulated sugar
- 1 + ½ cups hot water
- ½ fresh bunch mint if not 2 tablespoon dried mint is ok
- ½ bunch of parsley
- 1 teaspoon dried basil
- 1 teaspoon Allspice
- ½ teaspoon Cinnamon
- Salt and pepper
PREPARATION
- In a saucepan mix ½ cup olive oil with pine nuts and cook until pink.
- Add finely chopped onions and cook over a bit.
- Add rice, currants salt and sugar and cook 2 minutes in love heat
- Add pepper, mint, dried basil, allspice and cinnamon , mix it well
- Bring heat to high add ½ cup hot water and cook for 3 minutes
- Let the saucepan cool off without the cover
- Wash and clean the peppers. Remove the seeds
- Fill the peppers with the interior materials cooked in the saucepan, put tomatoe slices on top of the peppers to close the openings.
- Place in a pot.
- Put ½ cup olive oil in the pot and add 1 cup hot water.
- Cook until the peppers are tender
- Once cooked let it cool off all the way before serving
- Enjoy!
